The Chicken - Blackware skillet

A favorite La Chamba piece of cookware. This piece of blackware is in the shape of chicken… not as a soup or olla but more like a frying pan with a tail of feathers as its handle. It proudly pertrudes its head with comb and peak to welcome the diner.
It is a natural piece for serving fabulous eggs for brunch. The most important feature and cooking clue is it makes the eggs moister than you would usually have with a standard metal frying pan so plan accordingly. So it lends itself to cooking with less oil and makes very fluffy moist scrambled eggs and fritatas.
My next attempt will be a perfect chicken pot pie in this chic chicken of a cooking pot… stay tuned.

Cold Avocado Vichyssoise Potato Soup or Sopa de Aguacate y Papas - Recipe

Refreshing Cool Avocado Potatoe Soup with a latin twist to a classic Vichyssoise. Paried with Cheese Olive Crackers.
Cold Avocado Vichyssoise Potato Soup 3 large leeks3 T of butter or olive oil1 small chopped onion4 C vegetable broth1 lb of potatoes2 ripe avocados1 T White Pepper
2 T Fresh or 1 t of dried chives
Clean well and slice 3 large leeks, including a little way up the green. Chop the onion. Saute the leeks and onion until soft and transparent. 15 to 20 min. This will be blended later so they do not need to be chopped too fine. Add 4 cups of quality vegetable or chicken stock. I prefer vegetable broth since it brings in other subtle vegetable flavors such as celery and carrots. Heat over a low to medium heat source.
Peal potatoes and chop into smallish pieces. I prefer red potatoes for their buttery flavor but use a potato of your choice. Potatoes such as purple potatoes are an interesting choice but can affect the end color of the soup. Each type of potato adds a nice flavor variety. Cook potatoes in broth until tender 15 to 20 min. Cool slightly. Add 1 T of white pepper (black in a pinch) and chives. Season to taste.
Take warm potato mixture and blend until smooth. Warm the milk to somewhat match the temperature of the potato mixture. Add milk to the mixture and blend again. Chill the potato mixture until cold. Avocados will develop a bitter flavor if you add them to the hot or warm mixture. Cut and blend in the avocados to the potato mixture, chill for a couple of hours or better overnight.
Chill clay soup bowls - Ideal for keeping the soup nicely cool. Garnish with fresh chives and piece of avocado and accompany with a spicy cracker…
Olive Cheese Cracker recipe
1 C whole wheat flour½ C sliced green olives 4 T soften butter½ C graded sharp cheddar cheese1/4 t Cayenne PepperPre heat oven to 375 degrees. Mix together all ingredients. Spray non stick or grease cookie sheet. Put a spoonful of batter on sheet, flatten batter with a fork. Bake for 15 to 20 min. Will look oily when you are removing from sheet with a spatula. Harden slightly as they cool. Good chewy texture with for pairing with the Avocado Potato Soup.

Echo - NYC store with La Chamba Blackware Pottery

If you are in NYC and looking for La Chamba Cookware, I recommend a stop into echo by Artesanias de Columbian in the Soho NYC, NY. They are located at 355 West Broadway between Broome and Greene. http://www.colombianstoreny.com/
The store is well displayed full of quality crafts form Columbia, including many lovely baskets, Columbian Molas (vs Panamanian), jewely, apparel, home decor and a large collection of La Chamba cookware at fair prices.
A full table display featuring full tablesettings and serving pieces were a beautiful focal point in the store. Special pieces were some very large black serving platters $40 to $60… too large for my little NYC stove and oven but very impressive for large party serving. Another favorite were coconut rings with handles soup bowl pedestals, a perfect fit for the round bottom blackware bowls. Bright straw basket liners made to fit the La Chamba pieces also add a festive touch and table protection for tablesettings.

In the back of the store were shelves of the blackware dishware so you can instantly collect a whole tables worth of plates, bowls, big bean pots… One stop La Chamba shopping.
The staff… maybe the owner was very friendly and extremely helpful, even opened the store early for me on a Sunday morning as I was peering excitedly in the window.

An Excellent Scrub for La Chamba Blackware Clay Cookware

Michael gave me a fun purple scrub for my kitchen that is wonderful for cleaning blackware pottery. Doesn’t seem to scratch the surface and does a quick job on tough foods like scrambled eggs.
Called the Purple Pad, the playful color makes scrubing away just a little more fun.
“The Scotch-Brite™ Purple Scour Pad No. 2020 is the next generation of cleaning pad” according to the 3M website, http://solutions.3m.com/wps/portal/3M/en_us/PurplePad/Home .
I believe it is true. This purple pad has the perfectscrub surface for getting the job done quickly and the pad itself is easy to get what you get off the pan off the pad… that is usually a problem.
I have used mine for months now… something I would not have been confident to do with other scrubers for health reasons, but this one cleans up and airs out very well.
Now if you want to buy just 1, good luck. I found a few places that sell them by the case of 24 for less than $14 for the full case. A life time supply. And great gift for other friends. This scrub might even offer you a refreshed purple passion for cleaning.
